The famous chocolate cake, whipped cream and cherries.
This weekend was my little brother's birthday: 20 years! And his favorite cake is Schwartzwälder, the Black Forest cake, so I made him one 😉
This delicious cake is really very easy to make for a great presentation. For an alcohol-free version, you can use cherries in syrup.

For the cake
- 3 egg
- one egg white
- 100 g flour sifted
- 100 g powdered sugar
- 1/2 sachet chemical yeast
- two c. Soup bitter cocoa powder Van houten type
For the garnish
- fifty cl liquid cream
- 3 c. Soup powdered sugar
- 35 cl kirsch griottines
- 100 g dark chocolate
Prepare the cake: mix the yolks and sugar, add flour, baking powder and chocolate, then fold the beaten egg whites.
Bake 3 circles of the same sponge cake diameter for 10 minutes at 180 ° C. If, like me, it only has one circle, proceed 3 times 😉
Let the cake cool completely (I usually make the cake the day before 😉
Beat the cream in a firm whipped cream and then add the icing sugar. Tip: place the bowl and beaters in the freezer for 30 minutes, the cream will take more easily.
Drain the sour cherries and reserve the liquor. Keep the 6 most beautiful to decorate the cake.
Take your serving plate and place a sponge cake in the circle. Soak generously in liquor. Place a layer of whipped cream on top and glue half of the morello cherries on it.
Cover with the second sponge cake and press well to smooth the cream. Soak in liquor, cover with whipped cream and the rest of the sour cherries. Put the last biscuit disc and soak it in liquor.
Carefully remove the baking ring. Cover the cake with whipped cream around the edges and the top with a spatula. Apply the chocolate chips on the sides and on the top of the cake. Finish decorating with a pastry bag and reserved cherries.
Chill at least 2 hours before tasting.
