When I went to Norway last September I took a course in cream of mushroom soup. It was, it must be said, the full harvest season. I really enjoyed it and thought I would try to do it at home. And then I forgot … 😀 It was okay to cough cough. A few weeks later, I went to Haute Loire, to Edge to discover the mushrooms wild and there the desire for fungi returned. I also offered you a delicious recipe for roasted veal with cream and colmenillas. Since then, I try to cook more mushrooms because it is great to have it as a main course as here or with small touches to bring extra things.

For this recipe I bought a tray with mushroom strips. Yes, I know, some of you will think, no but hello what, but I find that from time to time it is still very practical.

For 4/6 people depending on appetite.

  • 500 g of mushrooms of fresh Paris, cut into strips
  • 10 g of butter
  • 1 tablespoon oil
  • 1 onion
  • 1 clove garlic
  • 1 small celery stalk
  • 50 ml white wine
  • 500 ml of chicken broth (or vegetables for a vegetarian version)
  • 2 sprigs of thyme
  • 100 ml individual cream
  • 1 pinch of salt
  • 1 bunch flat parsley

Peel and chop the onion. Wash the celery stalk and cut it into dice. Put the butter and oil in a saucepan. Heat and brown the chopped onions and shallots for 3 minutes over medium-high heat before adding the mushroom slices. Always cook over high heat for 5 minutes and then sprinkle with white wine.

Add the peeled and minced garlic clove, thyme, chicken broth and cook covered for about fifteen minutes. Add the cream, mix, cook for 2 more minutes.

Remove the sprigs of thyme and 2 large tablespoons of mushrooms (for decoration). Try the salt if necessary (the chicken broth is often salted) and go to the blender.

Serve on each plate, decorating with reserved mushrooms and chopped parsley.

For a more substantial dish, you can serve large toasts with toasted sourdough bread. Very good !
