A very fresh and spicy salad, perfect for summer!
Ah summer, the sun, the heat … from the moment we wait for you what feels good! So it makes me want fresh salads, doesn't it?
So today, another salad recipe but with citrus for the spicy and refreshing side, and shrimp for the crunch and the taste of the sea vacation!

Cook the rice as indicated on the package. During this time, cut the citrus fruits: start by cutting the base and the top of each fruit to make it flat.
Then, pass the blade of your knife along the white part to remove it completely and peel the raw citrus.
Take the supreme detailing every room along the membrane. Do this on a plate to collect the juice and squeeze the "core" before throwing it away. Reserve the supreme.
In a bowl, mix 5 tablespoons of citrus juice with honey. Then add the vinegar and olive oil, mix with a fork to mix well. Salt and pepper to taste.
In a bowl, combine the rice, shrimp and diced citrus slices. Add the dressing, mix and refrigerate. Before serving, sprinkle with fresh thyme.
I also added the pulp of a passion fruit that I had for dessert, a touch of crisp and exoticism that was really very appreciable ^^
