This recipe is super tasty and the acidity of the lemon twists it perfectly! I think I would try this praline / lemon combination in other delicacies so much that I liked it!

For once, I decided to make a "real" frangipane, that is, a mixture of almond cream and custard. We tend to misuse the term frangipane to designate an almond cream, but no, they are two different preparations, and we talk about Pithiviers for almond cream pancakes. Ingredients:

  • 2 rolls of puff pastry

for almond cream:

  • 160 g of almonds powder
  • 80 g praline paste
  • 80 g margarine
  • 20 g of powdered sugar
  • 80 g unsweetened applesauce

for custard

  • 110 ml vanilla soy milk
  • 15 g cornmeal
  • 20 g of powdered sugar

for Philippe Conticini's candied lemon:

  • 2 lemons
  • 75 g of powdered sugar

preparation:

Start preparing the candied lemon. Peel your lemon very finely to recover the skin, but without the white layer underneath. As if you were making a giant enthusiasm. Boil in a saucepan of water for 5 minutes, then drain them and repeat the operation 2 times, this will eliminate the bitterness.

Squeeze your two lemons, put the juice in a saucepan with the grated zest and sugar, and let cook in very small broths for about 40 minutes. The preparation will thicken slightly. Book for later.

Then prepare the custard. Heat the milk and sugar. In a separate bowl, mix the cornmeal with 2 or 3 tablespoons of water. Add this mixture to the milk and let it boil, while stirring with a whisk. The mixture will thicken very quickly, then stop cooking and let it cool gently.

Finally, let's move on to the almond cream! Melt the margarine, then simply mix it with the rest of the ingredients. Add custard to this mixture.

Preheat your oven to 180 ° C and assemble your cake. I like to cut a strip at the edges of the puff pastry that I just replaced at the edges to get a taller pancake, with a more impressive puff pastry dough. Cover the center of the dough with the frangipane preparation and add the candied lemon on it. Cover the edge of the dough with milk + maple syrup, and unwind the second puff pastry to cover the first. Cut the excess.

With the tip of a knife, make small cuts on the edge of the dough and gently scratch the top with the pattern you choose. Use the pattern to make small holes in the dough so that it does not swell too much when baking.

Brush the pie with the milk / agave syrup mixture. Bake in a hot oven (180 ° C) for 20-30 minutes. Remove from oven, brush with a little jam or maple syrup to make it shine. This cake is delicious but warm!
