Minute quiche with leeks and ham

Here is a recipe for mini quiche without dough very easy and quick to make.

A recipe from one of WW's new books (see below). Instead, I opted for a larger format for a light dinner with a salad. For the appetizer, prefer a mini format as suggested in the book (I made some visible pieces in the photos to give you an idea), enough to try it in one (or two) bite, convenient to eat; )

It's really very good, instead of chicken ham I used white ham and added old-fashioned mustard to add some flavor, perfect!

ingredients: (for 10 pieces of muffins or about 30 minis)


  1. Peel and finely chop the shallot.

  2. Heat a pan with the oil and brown the shallot.

  3. Meanwhile, finely chop the white leek and add it to cooking. Cook for 8 to 10 minutes. Add salt and pepper.

  4. Preheat the oven to 180 ° C.

  5. Mix the cornstarch in the milk, add the 3 eggs and the mustard and beat everything to obtain a homogeneous preparation.

  6. Cut the ham into small pieces. Add the leeks and mix.

  7. Divide the preparation into muffin type molds (I usually use this brioche mold for this type of preparation, which I find prettier than a simple muffin), filling up to 3/4. Then pour the previous preparation and add some grated Gruyere cheese.
  8. Bake for 15 to 20 minutes, controlling the end of cooking.

  9. Eat hot or cold. As a light meal or as a snack (mini version).
