Spring rolls – Asian recipe

On Saturday night I received friends and wanted to make a Chinese meal. So what could be better as an entree than homemade spring rolls? I had never done it before, but the different recipes obtained from the canvas seemed easy to me, so after a bit of remixing to make my recipe, the result was really great! Crispy and delicious spring rolls, like in a Chinese restaurant!

Do not hesitate to prepare a lot of nem, they freeze very well and is perfect for an impromptu snack 😉

  • Boil a large amount of water and then submerge the dried black mushrooms for 10 minutes. Drain and cut into small pieces.

  • Soak the noodles for 15 minutes in warm water, then carefully drain them and cut them into 5 cm sections. Chop the carrots and onions.

  • Pour a tablespoon of peanut oil in a saucepan over medium heat, add the pork and sautĂ© until it is colored. Add chopped shrimp and crab. Then season with salt, sugar and nuoc mĂąm. Skip 1 minute. Reserve in a salad bowl.

  • Instead of meat, put onions and carrots in the pan and sautĂ© for 2 minutes.

  • Add bean sprouts, mushrooms, noodles and beaten eggs. Cook for 1 minute, stirring, then add the meat. Mix all the ingredients well. Add the cornstarch diluted in 2 tablespoons of water and stir for another 2 minutes. Return the entire filling to the bowl and let it cool.

  • Once the filling is cold, you can make the spring rolls. Prepare a large bowl with warm water and melt a piece of sugar. Place the rice cakes one by one to soften them. Once the cake is softened, place it on a damp cloth and place a spoonful of filling there.

  • Fold the top of the cake over the filling. Fold the left and right tips over the filling. Roll towards the tip, squeezing the filling tightly to obtain a small, firm cylinder. Repeat the operation until the filling has run out. Place the spring rolls on a plate as they are made, covering with an adhesive film between the layers, then place them in the refrigerator.

  • Cook the spring rolls for 6 in a 180 ° deep fryer for 5 minutes. Drain on a paper towel while cooking. Serve with spring roll sauce, salad leaves and fresh mint.
