Stewed dates



Ingredients for 6 people:

  • 1 small organic pumpkin (or 700 g)
  • 2 parsnips (or 300 g)
  • 2 sweet potatoes (or 500 g)
  • 24 dates
  • 50 cl of vegetable stock
  • 1 handful of almonds without shell
  • 1 red onion
  • 2 cloves of garlic
  • 4 tablespoons olive oil
  • some coriander sprigs
  • ground cumin
  • salt pepper


  • Peel the parsnips, sweet potatoes, garlic cloves and onion, then wash the pumpkin, cut it in half, remove the seeds and cut the meat into thin slices without removing the skin. Cut the other sliced ​​vegetables, chop the onion, chop the garlic cloves and chop the dates.
  • Pour the oil into a saucepan and brown the onion. Then add the other vegetables and dates. Salt, pepper and spices to taste with cumin. Pour the hot broth, cover and simmer for about twenty minutes, until the vegetables are cooked.
  • Brown the almonds in a small nonstick skillet without fat. Serve the compote still hot sprinkled with golden almonds and some chopped coriander leaves.
